Eggless Date and Nut Rolls

Ingredients

  • 1 cup chopped pitted dates
  • 1 cup water
  • 1 cup castor sugar
  • 60g butter
  • 1 cup wholemeal flour
  • 1 cup self raising flour
  • 1 tsp bicarbonate of soda
  • ½ cup chopped walnuts

Method

Grease 2 nut rolls tins (8cm x 17cm). Place dates, water, sugar and butter in medium saucepan, stir over heat, without boiling, until sugar is dissolved. Bring to boil, simmer, covered, 4 minutes; cool 10 minutes. Stir flours, soda and nuts into date mixture. Spoon mixture into prepared tins, cover with lids, place tins upright on oven tray. Bake in moderate oven about 1 hour. Stand 5 minutes before removing from tins, and cool on wire racks.
